Last night I whipped a new dough recipe and he did not know what to say to him. Thankfully, people of Low Carb Motivation group helped me because most people decided that it should be called Cato Hot Pocket! Why did not I think about it? Brilliant! Fortunately, this recipe is a win or else I will not share it. When I am using, they are not finished as all the winners.
This recipe is not a single dough which we use for a pig in a blanket in this Fat Head dough recipe. This is slightly different than our low carb Keto friendly pizza recipe. it is different! I would say that it is a bit lighter.

I always take notes while preparing dishes. This time I am translating this recipe from a greasy sheet of paper. Some ink is smeared but all measurements thank you easy to read!

Keto Hot Pocket Dough Recipe Ingredients
1 3/4 cup mosaic cheese
5 Tbs Butter (I like some Kerigold butter!)
1/2 cup almond flour
1/4 cup coconut flour
1 1/2 TSP baking powder
1/2 TSP salt
1/2 TSP Garlic Powder
1/2 teaspoon onion powder
Note: You will need parchment paper or silicone mat or both! These are extremely helpful!
Keto hot pocket dough recipe instructions
I started heating my oven by 350 degrees.
You will need a small saucepan and medium sized bowls.
In a medium-sized bowl, first combine all the dry ingredients: almond flour, coconut flour, baking powder, salt, garlic powder, and onion powder.
In a small saucepan, begin melting the mosaic cheese on low heat.
Once the cheese has melted, add the butter and eggs in this mixture. You want to melt all the butter at the end of this butter. Until you add the dry ingredients, it will be liquid cheese.
Note: You can heat the cheese in the microwave but you will need to work fast. It is important to keep the paneer warm when you take out the dough. If not, then it will not be easily out. This is why I like to use a saucepan to heat the cheese. It remains somewhat hot until I’m ready to add all the ingredients together.
Now add all your dried ingredients in the saucepan mixture. It appears that the content does not come together immediately. You will separate the flour and paneer, but do not worry, when you knead the dough, these ingredients will eventually come together.
The dough mixture will be hot at this point but will not be hot (be careful to check it before touching the dough).
Put the dough mixture on a non-stick silicone mat or parchment paper (I like the silicone mat because it sticks to the counter top and does not scream when you are turning the flour)
Divide dough into two separate parts. Keep one of the summers in a hot saucepan until you are ready to roll it.
Slowly roll the hot dough into a rectangular shape. Then set it aside.
Hold the other hot flour part and rotate it in a rectangular shape. This flour rolls well but sometimes looks a bit sticky. If this happens, you can sprinkle a lot of coconut flour on the dough to prevent adhesiveness.
Now when you have two large rectangular shaped dough, you can add whatever you want to fill in these hot pockets. I use my remaining meat parts. I added one of them to hamburger meat, mozzarella cheese, and some lilacs. I added hamburger meat, mozzarella cheese and a small amount of spaghetti sauce to another. Both are amazing! Get creative with the filling! Next time I feel that I will add pepperoni, sausage, and pander to a small amount of spaghetti sauce. Update: There was some confusion on servings. I made two big hot pockets and then I cut each of them in six servings and cut them in different sizes. I wish I had taken a picture to show it but the family quickly consumed them as soon as I cut them.

I wanted to show you what the dough looks like before you start kneading it. It doesn’t look like it will come together but it does.
I used a silicone mat to roll the dough out. Then I flip the mat over onto a parchment sheet of paper to bake it. I would have used my other silicone mat to bake it on but I was using it for something else at the time.
I added a layer of Mozzarella cheese first.
Then I layer some seasoned hamburger on top with a few jalapenos! YUM!!!
I topped it with another small layer of Mozzarella cheese before folding it up.
I fold it by flipping over the long side first and the other long side. Then fold over the ends.
This is the second Keto Hot Pocket where I added a small amount of spaghetti sauce to the top of it. Don’t add too much because you don’t want the sauce coming out of the hot pocket when you bake it.
The house was smelling amazing at this point! Everyone came to see what just came out of the oven!!

Keto Hot Pocket Dough Recipe

Now add all of your dry ingredients into the saucepan mixture. It will seem as though the ingredients don't come together right away. You will see the separation of flours and cheese but, don't worry, these ingredients will eventually come together when you knead the dough.
The dough mixture will be warm at this point but not hot (be careful to check it before touching the dough).
Pour the dough mixture on to a non-stick silicone mat or parchment paper (I prefer the silicone mat because it sticks to the counter top and don't budge when you are rolling out the dough)
Split the dough into two different portions. Place one of the portions back in the warm saucepan until you are ready to roll it.
Gently roll the warm dough out into a rectangle shape. Then set it aside.
Grab the other warm dough portion and roll it out into a rectangle shape. This dough rolls nicely but seems to be a bit sticky at times. If that happens, you can sprinkle a very small amount of coconut flour onto the dough to prevent sticking.
Now that you have two large rectangles shaped dough spreads, you can add whatever filling you want into these hot pockets. I tend to use leftover meat portions in mine. I added hamburger meat, mozzarella cheese, and a few jalapenos to one of them. I added hamburger meat, mozzarella cheese and a small amount of spaghetti sauce to the other. Both turned out amazing! Get creative with the filling! Next time I think I will add pepperoni, sausage, and cheese with a small amount of spaghetti sauce. Please come back and tell me what you create because I am always up for a bit of variety and new ideas too.
Finally, bake it for about 18 to 20 minutes or until it's golden brown.
This dough recipe made two large Keto Hot Pockets. There are about 4 to 6 servings for each individual Hot Pocket depending on how big you slice them.
